While trying to come up with creative breakfast ideas for Back to School, my mind flashed back to an ice cream sundae served on top of a waffle. In particular, I remember having them at the amusement park. I realized that a waffle sundae was perfect to transform into a breakfast treat – Breakfast Waffle Sundaes.

Quaker® Real Medleys® Yogurt Cups

Yesterday my daughter and I were shopping at Walmart when we found the new Quaker® Real Medleys® Yogurt Cups in the cold cereal section of the cereal aisle alongside ready to eat single serve cereal cups. I’ve seen nothing like this before – a shelf-stable combination of granola, fruit, and yogurt in a single-serve cup. All you have to do is stir in 1/2 cup of COLD milk. Since we only sporadically eat yogurt, Quaker Real Medleys Yogurt Cups are a great new product for us because we don’t have to worry about short expiration dates on refrigerated yogurt. Quaker Real Medleys Yogurt Cups would also be a great option to take on vacation where we can easily buy milk at a convenience store but may not have access to yogurt, granola, and fresh fruit. Since you just have to add cold milk and stir it is simple to prepare without access to a full kitchen.

Breakfast Waffle Sundaes

For breakfast this morning, I decided to make Breakfast Waffle Sundaes. I started by making Belgian Waffles. I used a standard boxed waffle mix to make my waffles.

Before cooking the waffles, I made the Quaker Real Medleys Yogurt Cups. The cups are super easy to make, simply mix them with COLD milk and stir. Be careful to stir completely so that the dried yogurt powder is completely dissolved in the milk. The yogurt cups need to sit for 2 minutes after adding the milk to thicken. While the Yogurt Cups are thickening, cook your waffles.

Once the waffles and yogurt are ready, it is time to assemble your sundae. We made two different sundaes, one using the Strawberry Almond Yogurt and one using the Apple Cinnamon Yogurt. There is also a Raspberry Pecan variety.

Apple Cinnamon Sundae

For our first sundae, we topped the waffle with the Apple Cinnamon Yogurt. I then drizzled the sundae with Caramel Sauce and garnished it with sliced apples.

The Apple Cinnamon Sundae was my daughter’s choice this morning. She also added pancake syrup to her waffle before eating it. She enjoyed her sundae, but it was much too large of a serving for her. 

Strawberry Almond Sundae

I topped the waffle with Strawberry Almond Yogurt. Then I drizzled the sundae with chocolate syrup. I garnished with whipped cream and a sliced strawberry.

The Strawberry Almond Sundae was my choice this morning. Like my daughter I found it too large for a single serving. I really enjoyed the sundae. The granola and fruit in the yogurt provided a perfect crunch to contrast the cool yogurt and waffle.

With 25 grams of whole grains (from the granola) and 10 grams of protein when made with 1/2 cup of skim milk, Quaker Real Medleys Yogurt Cups are both satisfying and delicious. While delicious, the sundaes were so satisfying that I think going forward my daughter and I will agree on a yogurt flavor and either split a single sundae on a Belgian waffle, or use smaller frozen waffles and split the yogurt between two waffles.

With back to school approaching soon, we won’t have time for complex breakfasts that include freshly made waffles. However, the recipe can easily be adapted to be made with previously made waffles or frozen waffles. The first step each morning is to mix your Quaker Real Medley Yogurt Cup. Then heat your waffle in the toaster or toaster oven. Finally top the waffle with the yogurt and garnish.

For the Waffles
  1. 2 c Waffle Mix
  2. 1 1/3 c Milk
  3. 1 Egg
  4. 2 T Oil
For the Topping
  1. 1 Quaker® Real Medleys® Yogurt Cups, any flavor
  2. 1/2 c COLD Milk
  3. Caramel Syrup
  4. Chocolate Syrup
  5. Whipped Cream
  6. Fruit Garnish
Instructions
  1. Make waffle batter according to your favorite recipe or directions on your boxed mix. (Ingredient amounts are based on the mix that I used).
  2. Pour Cold Milk into Quaker Real Medley Yogurt Cup up to the dark line inside the cup. Stir until well mixed. Let sit for 2 minutes to thicken.
  3. Cook waffles in your waffle iron while the yogurt thickens.
  4. Top Waffle with Yogurt and drizzle with caramel sauce and/or chocolate sauce according to taste.
  5. Garnish with whipped cream and fresh fruit.
Quick Alternatives
  1. Substitute premade or frozen waffles. Mix the yogurt first so that it can thicken while you heat your waffle.
  2. The portion size was very large with Belgian waffles. With smaller frozen waffles, you can easily double the serving size by splitting a cup of yogurt between two waffles.

  • We love making homemade waffles but they can get kind of boring sometimes. This is a great idea to use the Quaker Real Medleys as a topping… especially if you add some caramel or chocolate to it. #client
